Sweet Potato, Egg & Green Chile Breakfast Quesadillas

Savory breakfast quesadillas full of sweet potatoes, fluffy scrambled Eggland’s Best eggs, green chile and melted cheddar cheese. The sweet and highly spiced quesadilla mixture will turn into your new favourite breakfast and surprise everyone with a unique taste. Serve them with Greek yogurt, guacamole and salsa for dipping!

  • 1 tablespoon olive oil, divided
  • 2 large Eggland’s Best eggs
  • 2 (8-inch) tortillas of selection (whole grain, gluten free, flavored, and so on.)

  • ½ cup mashed roasted sweet potato (or butternut squash)
