Summer Peach Spinach Salad with Avocado

There are a only a few easy recipes that I at all times come back to after I’m looking for an aspect dish to pair with dinner: steamed olive oil and sea salt broccoli with slightly melted cheddar cheese, cabbage carrot and goat cheese spinach salads with olive oil, lemon juice and S&P, roasted sesame asparagus and naturally, this PEACH SPINACH SALAD.

I know many of us aren’t into fruit on salads, but I’m begging you to provide this recipe a chance! Tony even had it for lunch the other day, which is a huge wonder because he religiously eats turkey sandwiches on Dave’s Killer Bread. By the best way, have you had their bagels yet? YUM.

I will’t blame him for choosing salad regardless that, it’s simply so refreshing and actually delicious. It’s packed with peaches, avocado, toasted almonds, goat cheese, purple onion and an easy do-it-yourself balsamic vinaigrette.Personally I believe it could be very best with an aspect of maple glazed salmon or one of my more than a few chicken marinades.

Anyway you do it, it’s gonna be excellent.

Fresh peach spinach salad with avocado, toasted almonds and goat cheese. This easy healthy spinach salad is highest for a grilling side all over the summer!

  • 4-6 cups organic spinach
  • 2 massive peaches, sliced
  • 1 avocado, diced
  • 1/2 small pink onion, very thinly sliced
  • 1/2 cup goat cheese crumbles
  • 1/2 cup sliced toasted almonds*
  • For the dressing:
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon dijon mustard
  • Optional: 1 teaspoon sugar, to sweeten dressing
  • Salt and pepper, to style
  1. In a medium bowl, whisk together the balsamic vinaigrette: balsamic, olive oil, minced garlic, dijon and salt and pepper.

  2. In a big bowl, upload the spinach. Drizzle with desired about of balsamic vinaigrette and toss in combination to mix. Top salad with peach slices, diced avocado, red onion, goat cheese crumbles and toasted almonds. Toss very gently again. Serve right away. Salad serves 4.

To toast your individual almonds: Place sliced almonds in a nonstick pan over medium warmth. Use a wooden spoon to constantly stir the almonds till they get great and golden. This should take 3-6 mins. Once finished, remove from warmth and transfer to a plate to cool.
